I'm sure that all PS2 games will work fine with your PS3. If they don't work for some reason, you should download the PS2 software available in the PS Store. However, I strongly suggest that you just use your regular PS2 to play these games because the PS3 lags too much while playing PS2 games. Keep in mind that the PS3 plays PS2 games by emulation and not by hardware slowing the data reading by a lot.
Not too sure with the Eye Toy games because they might not recognize the PS Eye. They also might require only the Eye Toy and not the PS Eye. The only way to find out is to try it yourself. The same goes for the Sing Star games.
